Including plenty of fibre-rich vegetables in the salad, such as mixed greens, cucumber, cherry tomatoes, bell peppers, and red onion, adds essential nutrients and promotes digestive health. Healthy Chicken Kebab Salad Recipe For People With Diabetes

Ingredients

Chicken Kebabs

  • 250 gms chicken breast keema
  • 1 tbsp ginger garlic paste
  • 1 tsp garam masala
  • ½ tsp red chilli powder
  • ½ tsp cumin powder
  • Mint leaves
  • Salt
  • Oil

In a bowl, combine all the ingredients. Toss to coat the chicken in the marinade. Allow it to marinate in the refrigerator for at least 30 minutes.

Dressing

  • ½ avocado
  • ½ cup yogurt
  • 2 cloves garlic
  • Lemon juice
  • Mint leaves
  • Salt
  • Evo

Combine avocado, yoghurt, garlic, and mint in a blender or mixer grinder. Blend until smooth. If needed, add a small amount of water to achieve the desired consistency. Season with salt and lemon juice. Drizzle with extra virgin olive oil.

Salad

  • Lettuce
  • Cucumber
  • Yellow bell pepper
  • ½ onion
  • Cherry tomatoes
  • Purple cabbage
  • Pomegranate seeds

Place the grilled chicken kebabs on top of the salad. Drizzle the desired dressing over the salad and sprinkle pomegranate seeds on top.
