Chicken Cafreal is a spicy and flavorful Goan dish that’s known for its distinctive green marinade and bold spices. This Goan dish has Portuguese influences. The tender chicken is marinated in a slightly-green coloured, tangy and spicy Cafreal masala paste and then slowly simmered to perfection in a robust, heavy-bottomed pan.

Chicken Cafreal is known for its spicy and aromatic flavours, so adjust the quantity of green chilies to suit your spice preference. Preparation Time – 1 hour 20 minutes
Cooking Time – 40 minutes
Serves – 12 portions

Ingredients

  • Chicken 1 kg
  • Mustard Oil 30 ml
  • Black Pepper 5 gm
  • Cloves 5 gm
  • Black Cardamom 3 gm
  • Star Anise 2 gm
  • Onion 300 gm
  • Tomato 100 gm
  • Ginger 10 gm
  • Garlic 10 gm
  • Red Chilli Powder to taste
  • Coriander Powder 5 gm
  • Turmeric Powder 5 gm
  • Green Coriander Leaves 30 gm
  • Green Chillies 5 gm
  • Salt to taste

Method

  • Use a sharp knife to make parallel and shallow cuts through the chicken.
  • Add coriander leaves with stem, ginger, garlic, green chillies, cumin seeds, black peppercorns, cinnamon sticks, vinegar, and fennel seeds in a grinding jar. Grind these ingredients into a smooth semi-thick paste.
  • Once the paste is ready, add salt, turmeric and lime juice.
  • Marinate the chicken with the masala and keep it aside for 1 hour.
  • Heat some oil in a heavy bottom pan.
  • Add the marinated chicken (don’t overcrowd the pan) and cook it for 7-8 minutes each side or until it’s cooked.
  • Garnish with some onions and lime wedge.
