“Dal Ki Dulhan” is a popular and heartwarming Indian dish, particularly in North Indian cuisine.This dish is essentially a creative and delicious way to present and serve lentils (dal). This dish contains a combination of dals and flour, which makes it highly nutritious. It also contains the goodness of spinach, a superfood for people with diabetes.

Savour Uttar Pradesh’s Tradition With Diabetes-Friendly Dal Ki Dulhan Recipe

This is a complete one-pot meal with the goodness of black wheat, buckwheat flour, spinach and protein-rich dal. This recipe is high in fibre and low in calories. It makes use of Buckwheat flour, which is gluten-free and is not only suitable for people with gluten allergies, but it is also packed with fibre,  potassium, calcium, iron and phosphorus. Cooking Time – 45 minutes

Serves – 6 portions

Ingredients

  • Black Wheat Flour 50 gm
  • Buckwheat  Flour 50 gm
  • Chana Dal 60 gm
  • Urad Dal 60 gm
  • Cumin Seeds 1 tsp
  • Dry Red Chilies 2
  • Garlic 10 gm
  • Ginger 10 gm
  • Onion 50 gm
  • Tomato 50 gm
  • Coriander Powder 10 gm
  • Cumin Powder 5 gm
  • Turmeric Powder 1 tsp
  • Green Amaranth 150 gm
  • Methi Leaves 50 gm
  • Spinach 150 gm
  • Salt to taste

Method 

  • Make a semi-soft dough with wheat and buckwheat flour using warm water. Keep it aside.
  • Blanch and chop the green chillies. Saute them in oil with some garlic and salt. Let it cool.
  • Boil urad and chana dal with turmeric and salt.
  • Roll out the dough and cut 9*9 cm squares. Put one little ball of filling in the middle, then fold the square forming a triangle. Then turn the opposite edges of the pasta around your finger and pinch the tips together. Now, add the dumplings to the boiling dal.
  • Saute the onion, tomato, and spices and add dal as a tadka.
  • Cook the dal till the dough is completely cooked and the dal is thickened.
  • Serve hot, garnished with some julienned ginger.
